Summer Time Pasta

I have made this recipe and taken it to alot of parties. i always come home with an empty bowl. It tastes great warm or cold. It’s super quick and easy. i tore it out of a Womans Day mag. while waiting in a Dr.’s office. of course i asked permission first!

Fresh Tomato and Basil Sauce with Pasta

12oz. spaghetti (i like thin spaghetti)
1/4 cup olive oil
5 garlic cloves, chopped
(i add in 2 chopped zucchini)
6 vine-ripe or roma tomatoes, chopped
3/4 cup torn fresh basil leaves or about 1 Tbs. dried basil
1/2 tsp. salt
sprinkle with pepper
grated Parmesan cheese
Directions:
cook pasta.
heat oil in skillet. add garlic and zucchini; cook a few minutes. take off heat and add 1 Tbs. more olive oil.
Mix everything all together and enjoy.

Broiled Tilapia Parmesan

This fish is ready in 15 min.! now that’s a quick meal. i love trying out new recipes. As a busy mom of 4 boys, i’m always looking for quick and easy. And one of the best places to find recipes is allrecipes.com. I only try the ones with high ratings. You could serve this to guests, it’s that good.

1/2 c. Parmeasn cheese
1/4 c. soft butter
3 Tbs. mayo
2 Tbs. fresh lemon juice
1/4 tsp. dried basil
1/4 tsp. pepper
1/8 tsp. onion powder
1/8 tsp. celery salt ( i never have it so i don’t use it)
2 lbs. tilapia fillets

Preheat broiler. grease or line broiling pan with foil.
mix everything together except fish.
put fillets in single layer on pan. broil few inches from heat 2-3 min. flip fillets and broil 2-3 more min. remove from oven and cover with cheese mixture on top side. broil 2 more min. or till browned and fish flakes. be careful not to overcook.
you can serve fish with any salad or veggie. it’s another good one from allrecipes.com

Way to a Man’s Heart

They say The way to a man’s heart is food. Well, it’s true! Been married 13 years and it still works. I’ll give you a recipe that’s so easy and so yummy, he’ll think you got it from a resturant. I love www.allrecipes.com.

Cream of Tomato Blue Cheese Soup

1 (26oz.) can tomato soup
2 (14.5oz) cans Italian style tomatoes (blended up for smaller chunks, if you like)
1/2 cup water
1 cup milk
put in pot over medium heat.

stir in:
4 oz. crumbled blue cheese
1 tsp. garlic powder
1 Tbs. dried basil
1 tsp. onion powder

Simmer for 15-20 min., stir often.
Eat with bread. And enjoy.
